<p>Considering a creepy snake guy that doesn't usually die wants possesion of his body, I think any sane guy would go for a kill, even the insane Itachi Uchiha.
Though the thing is, Orochimaru is not just immortal, he's sneaky, like he's always hidden, so Itachi will never be able to find him out to kill him. Maybe that's why real nice guy Itachi couldn't kill him off either, plus even the Akatsuki couldn't find Orochimaru properly, it was only Jiraya who was able to, if I'm right. And that's why Sasuke was the only one who could kill Oro, because he was next to him, and he had the techniques and chance to do so, no one else could.

<p>Well Itachi was probably written stronger being a good guy and all, the plot of Sasuke and Itachi, needed a strong Itachi that wasnt using his full power against Sasuke. The evil Itachi would not need such a boost, and so, the fight between him and Sasuke would be his physical best/point. Basically, Sasuke would win, without Itachi backing down. In the end, there wouldn't be a MS Sasuke for what we know. And so, the plot would differ, with many of the exciting highlights of the show being missed.
