She randomly pulled it out last chapter without explanation. Hopefully the anime at least does something to show her getting it.
If I'm not mistaken, Sarada got three tomoe Sharingan during one of the novels that is set before this or the previous manga arc.

I don't think Sarada being appointed leader is that odd. A leader doesn't have to be the smartest or most strategic. If there's someone on their team better at those things, the leader should be willing to listen (eg. Kakashi taking advice from Shikamaru against Hidan and Kakuzu).
Sarada was the most levelheaded of the group in the last couple of chapters, I think that's why she's best suited to lead the current group. I think Mitsuki can see that Sarada will be the most willing to make difficult necessary decisions such as a full retreat if it comes to it.
I just wish they'd stop having characters like Mitsuki divulging how they pull things off when they could just have that exposition delivered through someone else if needed.

The only thing I didn't like was the fight lacked Naruto dynamism in it, I think this was one of the first times I noticed it in this manga. Kinda makes everything feel mundane, but overall it was cool for the most part, explanations made sense
