Itachi could have said "Fighting Jiraiya is pointless, we don't need the 9 Tails until we gather every other beast anyways," or "a fight with a Sannin would cause too much destruction which would attract unwanted attention, we'll get Naruto another time." Lol it's so easy, especially since Kurama was needed last anyways.
In fact, Itachi literally was willing to take Kakashi prisoner earlier because Kakashi knew too much and they had to find out how much. He told Kisame as much. If Itachi was superior to Jiraiya, he would have wanted to capture him. If he wanted to leave him alone, he could say that the unwanted attention would bring light to their goals, which he obviously didn't want based on his reaction to Kakashi's knowledge of their goals.
You don't acknowledge anything else he said? Like "Only I can surpass Madara" is as factual as 2+2=4? Also if you're taking his word at "Tsukuyomi is unbreakable," why aren't you taking his word at "You broke my Tsukuyomi." Seems like a double standard.
Itachi literally goes on to state to Kabuto "I never said I could sense you" in response to Kabuto asking if he lied. And in many translation sites, it notes that it's a tricky thing with Japanese that can trick the viewer.

You're trying to interpret a translation by how an English speaking person would talk. Itachi notes that only an Uchiha can beat him, yet his Genjutsu is unbeatable? It makes no sense, he obviously means it's unbreakable to anyone but an Uchiha, which is supported by the fact that an Uchiha literally broke it.
Just... whatever man, you're being impossible and stretching so far I can't fathom how you're managing it. I mean no offense, you seem nice enough but so much evidence is given to you and you just either ignore it (literal databook) or you take one statement at face value and ignore the other countless similar hyperbolic statements that were proven wrong.
