So you are saying that the Man made lakes/ponds are not true? and that they are actually sink holes? Even more so that Oceans have been around and are not sink holes nor has the earth under them eroded away they have more or less shifted.
Also with you turning on the hose and it being low and the ground becoming soft be from being hard would that not say it absorbed the water to be soft just like sponge? A sponge in the air dries up becoming hard, adding water would make it soft again. >_>

Meh, I guess, but large-scale water techniques won't do much, like say a water dragon. If you were skilled enough, like Tobirama, then yes, you can concentrate your water flow to cut through solids with ease. Water in and of itself is not sharp.

Air is a natural insulator. If it was easy to conduct through, we'd be constantly shocked anytime a thunderstorm came by. In fact, electricity would be conducting from wall sockets themselves.

It sounds like everyone seems to be discounting other elements that need to taken into account with every nature type and technique. For one you have to consider that each technique have different levels of effectiveness i.e. rank, considering this it has been seen many times that a jutsu of lower rank but stronger nature may still lose to the weaker nature if that jutsu is stronger/a higher rank. The general rule as described by Kakashi was that an element will lose to its stronger nature if the technique is of the same power.
Now putting this into real life we can take many of the examples stated before such as water pressure and erosion vs varying solidity of earth in to the narutoverse context. If we consider that a weaker nature but stronger in strength can over power a stronger nature but weaker in strength we can understand that in every example that what we perceive to be the stronger element may be over powered. So it's very conceivable that earth is beaten by water when we think about river formation as well as the opposite.
I think the moral of the story is simple; nothing is as clear cut as we think, that is to say we should expect that general rules are just that and there are many varying factors which define the correct response for this question. Considering the complexity of many of the new techniques and their almost outlandish power it would be foolish to assume that standard rules still apply, completely.

just because the ground absorbs water like a sponge doesn't mean the ground is stronger because clearly the ground becomes soft and easy to break. what this would mean is if you were a ninja and i was a ninja and i shot a ball of water at you and you used earth release and formed a wall. your wall might initially withstand my water stream but your wall would then become weak and easy to attack and break through so in the initial contact the earth wall would be strong against the water but the water would in fact make the earth wall weak to all other attacks.
